Apple Pie Oatmeal - Foody First

Apple season is here and I couldn't be more excited. Oatmeal has kind of been on the back burner all summer, but I know it's fall when I start craving it again in the morning. This oatmeal tastes just like apple pie, and I'm sure the whole family will enjoy it!

Apple Pie Oatmeal

Serves 1 // Gluten Free (if GF oats are used), Vegan, Vegetarian, Dairy Free (if non-dairy milk is used), Refined Sugar-Free

INGREDIENTS:

  • 1/3 cup rolled oats

  • 1 & 1/2 (another 1/2 for serving) medium Gala apple, cored, and chopped into 1-inch pieces

  • 1 Tbs chia seeds

  • 1 cup almond milk (or your milk of choice)

  • 1 tsp cinnamon (plus more for sprinkling)

  • 1/2 tsp ground ginger

  • pinch salt

  • 1/2 tsp vanilla extract

  • 1 Tbs maple syrup

  • pinch of shredded coconut for serving

  • 1 Tbs hemp seeds, for serving

DIRECTIONS:

  1. In a medium saucepan, over medium heat, combine oats, 1 & 1/2 apples chopped, chia seeds, milk, cinnamon, ginger, and salt. Stir to combine. Bring the mixture to a low boil and then turn down the heat to simmer for 8-10minutes, stirring often so it doesn't stick on the bottom.

  2. When mixture has thickened, remove from heat and add vanilla extract and maple syrup.

  3. Pour oatmeal into a bowl and top with coconut, hemp seeds, and 1/2 sliced apple, and a sprinkle of cinnamon.
