I know I know, chocolate is filling your life right now with Valentine’s Day coming up, but personally, I wouldn’t have it any other way! Made these chocolate chia pudding parfaits for “dessert” and they’re DELISH. I say “dessert” because I would 100% have these for breakfast too!
These chocolate chia parfaits are incredibly filling (and of course delicious) with the healthy fats and fibre from the chia. You can top it with whatever your heart desires! My favourites are almond butter, coconut, and cacao nibs, and days that I’m feeling fancy: coconut whipped cream (can use dairy whipped cream if you can handle dairy). It is one of the easiest breakfasts, desserts, or snacks you’ll make this chocolate-season! Promise it will make your life better!

Super Easy Chocolate Chia Pudding
Serves 2-3 // Vegan, Paleo, Raw, Refined Sugar-Free, Gluten Free, Dairy Free
1/4 cup + 1 Tbs (63g) chia seeds
1 can (14oz/400ml) light coconut milk
1/4 cup (30g) cacao/cocoa
1/4 cup (60ml) maple syrup
Pinch sea salt
Almond butter or any other nut/seed butter of choice
Coconut whipped cream (or dairy whipped cream)
Flaked or shredded coconut
The night before: Pour chia seeds into a bowl and then the coconut milk and whisk together. Cover and place in fridge overnight.
When ready to eat: Remove chia seed pudding from the fridge and stir well to break up the seeds. May need to use the back of a spoon to break up the “chunks.” Stir in the cacao/cocoa, maple syrup, and a pinch of salt.
To serve: Scoop into glasses or bowls and top with almond butter, whipped cream, cacao nibs, berries, coconut or whatever else your heart desires! Enjoy!
