Ever have food that makes you feel super fancyyy? This was me with this toast! What is it about figs that make you feel so queen-like?

Loving the fact that figs are in-season (not here in Canada, but thank goodness we import a lot of produce or I’d never get to try these beauties!). They are a delicate, mild, and also slightly scary fruits. They pair well with bold flavours like balsamic vinegar & salty cheeses, which means that is exactly what I was going to put on my toasts!

I promise, make this toast and feel like royalty!!

Fig Jam Toast with Caramelized Walnuts

Serves 4 // Vegetarian, Gluten Free (if using GF bread), Refined Sugar-Free

INGREDIENTS:

For the jam:

  • 1/2 pound (about 3) ripe figs

  • 1 tsp- 1 Tbs balsamic vinegar

  • 1 Tablespoon honey

For Caramelized Walnuts: 

  • 1/2 cup walnut pieces

  • 2 tsp honey

  • pinch cinnamon

  • pinch salt

The rest:

  • Crusty bread or a baguette, sliced thin, grilled or toasted

  • 6 figs

  • Honey

  • Feta

  • Fresh Thyme

DIRECTIONS:

  1. For the jam: In a medium saucepan, over medium heat, combine figs, balsamic vinegar (start with 1 tsp and add up to 1 Tbs - to taste), and honey. Stir continuously and mush up figs as they cook. Once they are very soft and broken apart you can either leave it like that or use an immersion blender to blend the jam into a smoother consistency.

  2. For the walnuts: In a small saucepan over medium heat toast the walnuts for about 2 minutes, stirring around continuously, or until fragrant. Remove from heat and add honey, and a pinch of cinnamon and salt. Stir to coat and set aside to cool.

  3. For assembly: Cut crusty bread into thin slices. Toast or grill slightly. Spread with the fig jam. Arrange sliced figs, crumbled feta, bits of fresh thyme, and the caramelized walnuts. Drizzle with honey and serve!
