As you know, I’m a little obsessed with the tasty combination of melon and lime right now! Also melon balls, because look how pretty they are!!

You can use a melon baller or ice cream scoop to make this salad! I like this one because it has two different sizes so you can mix the sizing up, making it even more fun! In case you wanted to know a trick on how to make the melon balls come out nicely: flip the scoop side of the melon baller or ice cream scoop down, press into the melon and then turn. How did I learn this trick? Oh just casually watched a YouTube video on how to use a melon baller… YUP!

This salad is making me dream of all the ways that I can use melon and lime together. Might just be my new favourite summery combo and I am so here for it!

Just like the other watermelon salad I posted recently, this is gluten free, vegan, paleo , raw, and whole30 - so it really is the most perfect thing to bring to a summer get together where you know there may be differing food preferences! It’s a win win you guys! Tasty and all-eater friendly!

Melon Ball Salad with Fennel and Lime Dressing

Serves 6-8 // Vegan, Vegetarian, Paleo, Refined Sugar-Free & No Sugar Added, Gluten Free, Dairy Free, Whole30

INGREDIENTS:

  • 1 small watermelon

  • 1 small cantaloupe

  • 1 small honeydew melon

  • 1 small fennel bulb, shaved

  • 1/4 cup cherry tomatoes or tomberries (tiny tomatoes), sliced

Lime Dressing:

  • 1/4 cup olive oil

  • 2 small limes

  • Pinch sea salt

  • Pinch black pepper

Optional:

  • Microgreens

  • Fennel fronds

DIRECTIONS:

  1. Using a melon baller or ice cream scoop, scoop balls from the melons. Place the melon on a large serving platter. Arrange the shaved fennel, tomatoes, and microgreens/fennel fronds around the melon balls.

  2. Whisk together the dressing and pour over as much as you want over salad.

  3. Enjoy!
