Ice cream lovers, you can now enjoy your ice cream without the thought of trans fats, processed sugar, and other strange additives entering your mind. This nice cream has a slight coffee flavour, but can easily be omitted if you don't want it. A yummy mid-afternoon snack, or a delicious cool dessert - so many options!
I'm obsessed with Nice Cream - just going to come right out here and say it! For those of you that don't know, "Nice Cream" is basically blended frozen bananas made into an ice-cream consistency. You can simply just blend frozen bananas, but I like to jaaaazz mine up with a few things!
Mocha Berry Nice Cream
1-2 servings // Dairy Free, Gluten Free, Vegan, No Sugar Added, Paleo, Whole30
2 frozen bananas
2-3 Tbs milk of choice (I use unsweetened almond milk)
1 Tbs peanut butter or nut butter of choice (I use all natural PB, don’t use PB if on Whole30)
1 Tbs cocoa
1-2 tsp espresso powder (omit if desired)
berries of your choice
If using strawberries, chop or slice them up.
Get out your magic bullet or small food processor
Break frozen banana up into chunks into either the blender or magic bullet to make it easier to blend up
Add 2 Tbs of milk of choice, nut butter, cocoa, and 1 tsp espresso powder
Blend! If the processor or magic bullet is struggling, add more liquid in small amounts. I usually have to shake mine and bang it on the counter. You can always add more liquid to make it easier, it'll just be runnier. You can either leave it like that, or just freeze it to make it harder again... if you want to wait! ;)
Add more espresso powder if desired.
Once combined and smooth, add a few berries to the bottom of the cup or bowl and layer with your nice cream. Put some berries on the top and enjoy!
