Meet my newest most-favourite summertime dessert! Actually, I think this no-bake lemon tart may just have topped the list of my most favourite things ever. I mean how could it not have?! Let’s list this things that it has going for it, shall we:

Starting with a simple crust that reminds me of cookie dough, which is a very very good thing, and filled with a lemony filling, which is beyond dreamy - super super creamy, perfectly zingy, and full of simple nutritious ingredients. Topped off with a raspberry sauce that tastes like jam and fresh blueberries (or any other seasonal fruit!) - how much more summery can you get?!

I’ve been having a slice in the morning with some morning tea, a slice at 3pm for afternoon tea and a little more after dinner for kicks! So I’m thinking this is perfect to eat all day and whenever your heart desires! This isn’t going to last too much longer before I need to make another one.

No-Bake Lemon Tart with Raspberry Sauce and Blueberries {Vegan, Gluten Free}

Serves 8-12 // Vegan, Paleo, Raw, Refined Sugar-Free, Vegetarian, Gluten Free, Dairy Free

INGREDIENTS:

Crust:

  • 1 ½ cups whole raw or roasted almonds (195g)

  • ½ cup unsweetened shredded coconut (60g)

  • Pinch salt

  • 2 Tbs maple syrup (30ml)

Tart filling:

  • 2 cups cashews (305g) covered with cool water and soaked for 12 hours or with boiling water for 1-2 hours

  • ½ cup honey or maple syrup (115ml)

  • 1-2 Tbs lemon zest (zest of 2 large lemons)

  • Scant ½ cup fresh lemon juice (110ml) (2 large lemons) 

  • ½ cup coconut oil (115ml), melted and cooled

  • 1/8 tsp turmeric powder (optional, for the yellow colour)

  • Pinch salt

Raspberry sauce:

  • 1 cup fresh or frozen raspberries (120g)

  • 1 Tbs maple syrup (15ml)

Toppings:

  • 1 cup blueberries (or any other seasonal fruit!)

  • 1 Tbs fine shredded coconut (optional)

DIRECTIONS:

Crust:

  1. Line 8" springform pan with parchment paper (can also use tart pan with removable sides or deep dish pie plate).

  2. Place your almonds, coconut, salt, and maple syrup in a food processor or blender and blend until a loose dough forms. It may take several minutes if using a food processor. I used a blender and I stopped it just as the mixture became a uniform colour, but before it became too oily (like almond butter).

  3. Scoop crust mixture into the springform pan, cake pan or pie plate. Press firmly, making sure that the edges are well packed and that the base is relatively even. Using the bottom of a flat glass works well! Rinse food processor/blender out well. Chill crust in fridge or freezer.

Filling:

  1. Drain and rinse the cashews and pour them and the rest of the filling ingredients into your food processor/blender and blend on high until very smooth. A food processor may take up to 5-8 minutes. Test it to see if it is still grainy, if so process for a couple more minutes.

  2. Pour filling into chilled crust, smooth with a spatula, and chill in the fridge until firm, about 4 hours (or cover and chill overnight).

Raspberry Sauce and Toppings:

  1. Before serving, add 1 cup of fresh or frozen raspberries and 1 Tbs maple syrup to a small pot and heat on low-medium until the berries soften or release moisture. Mash with a spoon or fork. Simmer for 3-4 minutes or until moisture has evaporated and the mixture has thickened. Remove from heat and let cool.

  2. Once tart is firm, carefully remove it from springform pan or tart pan or serve straight in pie plate. Cover in the raspberry sauce, fresh blueberries, and a sprinkle of coconut.

  3. Leftovers can be covered and kept in the fridge for 3 days, or cover and store in the freezer.
