When you get a hankering for a chocolatey treat… you just go with it. And for these treats, I WENT FOR IT!
I made these puffed quinoa fudgey bites by starting with the idea of rice krispies squares, but I wanted to take them up a notch (or maybe several notches). Rich, decadent, delicious, perfectly filling, but also filled with healthy fats and fibre. You can definitely feel good about fuelling your body with these! If you’re trying to stay away from maple syrup, try my No-Bake Fudgy Chocolate Coconut Bites, which are made with dates :)
The puffed quinoa has a slightly chewy texture, which makes these bites even more fudgey (totally a fan!). It doesn’t soak up the mixture, so they stay fudgey and do not become soggy over time. Translation - they become more and more delicious as time passes. So here for it!
Super easy to make (think as easy as rice krispie squares) so you can have them as soon as a chocolatey craving hits… making them ideal in my world.
Puffed Quinoa Fudgey Bites
Makes 14 // Vegan, Refined Sugar-Free, Gluten Free, Dairy Free
1/2 cup (125ml) coconut butter or coconut oil
1/2 cup (50g) cocoa/cacao
1/2 cup (125ml) maple syrup
1 tsp vanilla
1/4 tsp salt
1 cup (30g) puffed quinoa
1/2 cup (30g) shredded coconut
More puffed quinoa
Blue spirulina/butterfly pea powder
In a medium pot over low heat: melt coconut butter or coconut oil. Add cocoa/cacao and maple syrup and stir to combine.
Remove from heat and stir in vanilla and salt. Once combined, add puffed quinoa and coconut and stir to combine.
Using a 3Tbs scoop, or just eye-balling it, use your hands to roll mixture into balls.
“Sprinkles” are optional, but if you want, pour some out onto a small plate and roll the balls in the sprinkles you desire.
Store in fridge and enjoy!
