I bought a whole whack of raspberries, back in the summer when they were going for 50 cents a pint. I froze them right away so I could enjoy them in the cooler months. Now I’m enjoying raspberry nice cream sundaes in November!
This nice cream includes steamed, then frozen cauliflower, which boosts the veggie content, as well as boosting the volume of the snack without adding more fairly high in sugar fruits.
It takes me right back to the summer! Topped with my version of chocolate chips - cacao nibs, coconut, bee pollen and more raspberries - THIS is my kinda ice cream sundae!
Raspberry Nice Cream Sundae
Serves 2 // Vegan, Raw, Paleo, Refined Sugar-Free & No Sugar Added, Vegetarian, Gluten Free, Dairy Free, Whole30
2 bananas, peeled, and frozen (230g)
1/2 cup (50g) steamed then frozen cauliflower (or raw than frozen)
1 1/2 cups (150g) frozen raspberries
1/2 cup (60ml) milk of choice - I used cashew milk
Shredded or flaked coconut
Using a blender or food processor, blend together all ingredients.
Serve into a bowl or jar and top with anything you want really!
