An easy breakfast, lunch, or dinner idea! You can top these sweet potatoes with any toppings you like and have a yummy and nutritious meal.

Savoury Stuffed Sweet Potatoes

Serves 2-3 // Gluten-Fee, No Sugar Added, Can be Vegan, Dairy, Paleo, Whole30

INGREDIENTS:

  • 3 sweet potatoes (0.5-1 lb each)

  • Any toppings you like:

    • Savoury ideas: Sloppy joes, vegan lentil sloppy joes, shredded cabbage, cherry tomatoes, black bean dip, yogurt, guacamole

DIRECTIONS:

  1. Preheat oven to 400°F.

  2. With a fork, pierce sweet potato 5-6 times.

  3. Place potatoes on baking sheet lined with foil. Bake until tender, 45 minutes to 1 hour.

  4. Alternatively, you can prick the potatoes 5-6 times, and then microwave for 7-10minutes (turning half way through).

  5. Remove potatoes from oven/microwave. Let cool a couple minutes and then slice down the middle and fill with desired toppings.
