Looking for a meal prep idea that is SO easy to actually prep? These stuffed sweet potatoes will make dinners so easy. All it takes is turning on the oven on the weekend and you’ve got yourself the perfect “sweet potato boat” to stuff and fill when you get home at 5pm and you’re starving!
I have been known to just fry up an egg and put it on top #putaneggonit, which is probably the easiest route you can go! But you can also top it with my Mexican Vegan Black Bean Dip (which you can prep on the weekend too - also just as easy in the slow cooker!).
Savoury Stuffed Sweet Potatoes
As many sweet potatoes as you want // Gluten-Fee, No Sugar Added, Can be Vegan, Dairy, Paleo, Whole30
Sweet potatoes (0.5-1 lb each)
Any toppings you like:
sloppy joes, vegan lentil sloppy joes, shredded cabbage, cherry tomatoes, black bean dip, yogurt, guacamole, fried egg
Preheat oven to 400°F.
With a fork, pierce sweet potato 5-6 times.
Place potatoes on baking sheet lined with foil. Bake until tender, 45 minutes to 1 hour.
Alternatively, you can prick the potatoes 5-6 times, and then microwave for 7-10minutes (turning half way through).
Remove potatoes from oven/microwave. If you are keeping these for meals throughout the week let cool completely and then store in a container in the fridge. If you’re eating them right away let cool a couple minutes and then slice down the middle and fill with desired toppings.
