Craving all the comforting, cozy and delicious recipes that are also easy and effortless. Enter this sweet potato lentil curry!
The sweet and tender cubes of sweet potato, the layers of curry flavours, the creaminess of the coconut milk. Dreamy! (Is that weird to say about a curry? I don’t think so!).
This makes a big batch, so I’ve been making it on the weekend as part of meal prep. Freeze some for dinners, have some for work lunches, or have a big ol’ plant based dinner party with this tasty curry!
Some days the less thinking that needs to go into putting dinner on the table the better. This meal is so easy because the slow cooker does all the work. I’m sure it would work in and Instant Pot as well, if you test it out, let me know!
I paired mine with rice and mixed it all together. Also delicious with quinoa and entirely by itself! Drizzle with a little more coconut cream and a fresh toss of cilantro and you’re set!
Slow Cooker Sweet Potato Lentil Curry
Serves 6-10 // Vegan, Refined Sugar-Free, No Sugar Added, Gluten Free, Dairy Free
2 cups dried green/brown lentils
1 28oz (796ml) can diced tomatoes
1 onion, finely diced
1 sweet potato (about 1 pound), diced
1/4 tsp garlic powder or 2 garlic cloves, minced
1 tsp salt
3 Tbs curry powder
1 Tbs garam masala (or omit)
1/4 tsp pepper
1/4 tsp red pepper flakes
3 cups broth or water
14oz (400ml) can full fat coconut milk
Red Pepper Flakes
Rice or quinoa
Place or pour all ingredients, except coconut milk, into large slow cooker.
Cook on low for 7-8 hours or on high for 4-5 hours and then stir in coconut milk.
Serve with desired toppings and sides and Enjoy!
