All the citrus happening right now and I couldn’t be happier. I look forward to this season as soon as it starts getting colder. There are so many varieties of citrus that come available, and all so beautiful!
Citrus fruits are not only pretty to look at, but so good for our bodies!
Filled with vitamin C (yes, the obvious one!), but also potassium, which is crucial to maintain a healthy heart and kidneys and properly contracting muscles! Potassium and sodium (salt!) need to be consumed in balanced amounts in order to help our body work efficiently, but because our diet's can be high in sodium, potassium is left lagging behind. This makes citrus and other whole foods so important in order to counter balance. Reducing the amount of packaged and processed food and eating more fruits and veggies will help!
This combination of ingredients is all over Pinterest and Instagram, and there’s a reason why – because it’s delicious and SO pretty! All it takes is thinly slicing the seasonal veggies and fruit, a drizzle of this, a sprinkle of that, and you're DONE! You feel summery when eating it from the vibrant colours, but it's a full-on celebration of winter produce!
Sunshiney Avocado, Fennel and Grapefruit Salad
Serves 2 // Vegan, Raw, Refined Sugar-Free, No Sugar Added, Gluten Free, Dairy Free, Paleo
1/2 fennel bulb
1 orange, clementine, or mandarin
Pinch of red pepper flakes
1/4 tsp sea salt
1 Tbs Hemp seeds
1 Tbs Avocado oil
Optional: fresh dill or use fennel fronds
Slice the avocado and fennel. You can use a mandarin slicer for the fennel if desired.
Peel the grapefruit and orange/mandarin/clementine and thinly slice them as well.
Arrange fruit and veggies on a plate and top with red pepper flakes, sea salt, and hemp seeds. Drizzle with avocado oiled dill or fennel fronds. Enjoy!!
