What do you do when it feels like the middle of Summer in October? You enjoy sweet potato smoothie bowls - the best of both summer and fall!
I never thought sweet potatoes would work in a smoothie bowl, because… potatoes?! But it totally works and it makes it so creamy without loads of added fruit and it means you’re eating even more veggies! It is so delicious, especially with the warming spices added.
If you are sensitive to bananas sub in mango to still get that sweetness. The bowl pictured above is made with mango, the one below is with banana. Either work and either taste delicious!
Sweet Potato Mango Smoothie Bowl
Serves 1-2 // Vegan, Paleo, Raw, Refined Sugar-Free & No Sugar Added, Vegetarian, Gluten Free, Dairy Free, Whole30
1 heaping cup (130g) steamed or roasted then frozen cubed, unpeeled, sweet potato
1 cup (150g) cubed then frozen ripe mango (can also use 1 frozen banana)
1/2 cup (50g) steamed then frozen cauliflower, or just raw then frozen
1/4 cup (60ml) milk of choice, I used unsweetened almond milk
1 tsp (5ml) ground turmeric
1/2 tsp (2.5ml) ground cinnamon
1/4 tsp (1.25ml) ground cardamom
pinch of black pepper
Shredded or flaked coconut
Using a blender or food processor, blend together all ingredients, except the spices. Once blended smooth add the spices (this prevents them from flying up in the blender/processor)
Serve into a bowl or jar and top with anything you want really!
