All the antioxidants and anti inflammatory benefits of turmeric, but in pudding form! Heating the turmeric helps to activate the powerful part (curcurmin) so you can better absorb it! I love things that are healthy and pretty. Enjoy this as a breakfast, mid-day pick-me up or after dinner treat.
Turmeric Chia Pudding
Makes 1 Serving // Vegan, Vegetarian, Gluten Free, Dairy Free, No Sugar Added, Whole30
1 cup almond milk (or milk of choice - coconut milk would make it more rich/dessert like)
1/4 - 1/2 tsp turmeric (go with what your taste buds like!)
1/4 tsp cinnamon
1/4 tsp vanilla
4 Tbs chia seeds
Optional toppings: coconut whipped cream, yogurt, cranberries, coconut, orange zest
Heat almond milk, turmeric, and cinnamon in a small sauce pan. Bring to a boil and then simmer for a couple minutes until the spices are combined.
Remove from heat and add vanilla.
Sieve through a strainer into a small bowl and add chia seeds. Stir to combine.
Cover and put in fridge overnight.
When you're ready to serve, stir chia seed mixture (if you don't like the texture of chia seeds, you can blend it at this stage), pour into a cup or bowl and top with your desired toppings!
