This summer I am all about the recipes that you can barely call *recipes*! Case and point - this watermelon salad with heirloom tomatoes and lime. So simple that most of the ingredients are in the title ;)

The other day I was in the grocery store and I saw alllll the melons, so many kinds! Half of them I hadn’t even seen before. I loaded up on all my favs - just so juicy, sweet, and refreshing! Do you have a favourite?! Gimme a perfectly ripe cantaloupe and super sweet ‘n juicy watermelon and I am SET.

What better thing to pair an intensely sweet watermelon with than one of summer’s other beauty - heirloom tomatoes! I will never get over how gorgeous these are!

Not only is this salad super easy to prepare, it’s gluten free, vegan, paleo , raw, and whole30 - so it really is the most perfect thing to bring to a summer get together where you know there may be differing food preferences! It’s a win win you guys! Tasty and all-eater friendly!

Watermelon Salad with Heirloom Tomatoes and Lime

Serves 8-12 // Vegan, Vegetarian, Paleo, Refined Sugar-Free & No Sugar Added, Gluten Free, Dairy Free, Whole30

INGREDIENTS:

  • 1 small watermelon, cubed

  • 2 heirloom tomatoes (or regular), sliced

  • 1/2 cup heirloom cherry tomatoes (or regular), halved

  • 1/4 cup olive oil

  • 2 small limes

  • Pinch sea salt

  • Pinch black pepper

  • Microgreens

  • Edible Flowers (optional)

DIRECTIONS:

  1. Place cubed watermelon into a large bowl.

  2. Whisk together the juice of two limes, olive oil, and the pinch of sea salt and pepper. Pour over watermelon and toss to coat.

  3. Scoop watermelon out onto a large platter. Arrange sliced tomatoes among the watermelon cubes and top with microgreens and edible flowers (optional).

  4. Enjoy!
